The last one was coriander crusted seared scallops with pickled red onions, cilantro, fresno peppers, avocado, and citrus vinaigrette.  Basically a French twist on ceviche.  Absolutely delicious, and beautifully plated...but it got old.  So I switched it up to nasturtium leaf soup and shallot-cucumber relish.
